How to Prepare Hot Chicken Soup:

Here’s a basic recipe for a comforting and delicious hot chicken soup:

  • 1 pound boneless, skinless chicken breasts or thighs, cut into 1-inch pieces (or a whole chicken, cut into pieces)

  • 1 large onion, chopped

  • 2 carrots, peeled and sliced

  • 2 celery stalks, sliced

  • 2 cloves garlic, minced

  • 8 cups chicken broth (low sodium)

  • 1/2 cup small pasta (e.g., ditalini, orzo, egg noodles)

  • 1 teaspoon dried thyme

  • 1 bay leaf

  • Salt and freshly ground black pepper to taste

  • Fresh parsley, chopped, for garnish

Instructions:

  1. Saut├й Chicken:┬аIn a large pot or Dutch oven, heat the olive oil over medium heat. Add the chicken pieces and cook until lightly browned on all sides. Remove the chicken and set aside.

2. Saut├й Vegetables:┬аAdd the chopped onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.

3. Combine Ingredients:┬аReturn the chicken to the pot. Pour in the chicken broth. Add the dried thyme and bay leaf. Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 20 minutes to allow the flavors to meld.

4. Add Pasta:┬аStir in the small pasta. Cook according to package directions, usually 7-10 minutes, until the pasta is al dente.

5. Season and Serve:┬аRemove the bay leaf. Season the soup with salt and pepper to taste. Ladle into bowls and garnish with fresh chopped parsley.
